strong ipa
hi, I'm looking to make a strong pale ale, with a good hop hit, thinking about 6.5 - 7%, I've got apollo, chinook and amarillo and a fair no. of malts. any good recipes you guys can recommend or should i just make it up as i go along?

I usually make up my IPA's using 6kgs pale, 300gms wheat and 200gms white sugar. 100gms of the highest AA% hop you have (say Apollo) at 90mins and then have my aroma hops (say Amarillo) at 15mins 50gms and another 50gms at knock out. Usually get about 6% - 6.5% for 25ltrs using Safale S05.

Assuming you're going for a 5gallon brew, I would aim for 60-70IBU maybe a little more. I wouldn't personally use the Apollo for bittering as they are lovely as a late addition but if you do then FWH them and boil for 60mins. You'll want at least 100g of hops in late to balance the bitterness. Ant D's malt base looks good but you may need to increase accordingly to hit 7%. Use a Nottingham or West Coast style yeast. Let us know your final recipe.

Just remembered the 60 odd grammes of simcoe I've got, so could do a simcoriilo, say;
6.0 pale malt
300g wheat malt
200 g cara
then make up the og with some sugar
then bitter with the simcoe to about, as you say, about 60 - 70 ibu
100 g amarillo, late, steep, dry,
ok?

With that grain bill you should hit your target without the need for additional sugar but that's your choice.
Definitely dry hop as well if you want a bit more of a hop hit.
