Stone & Wood Pacific PA
This was a beer I loved when I was down under out in Byron Bay a few years ago and I've been meaning to brew it for a long time. It is a hazy, light, refreshing beer that's bursting with passion fruit flavours. The S&W website says that it's made with malted barley, wheat and Galaxy hops. I have seen a lot of recipes on the aussie forums and the general consensus is 60% malt, 40% wheat and low bitterness 15-20 IBUs. The Galaxy are late and dry hopped. There was never too much discussion about yeast, but most of the aussie homebrewers are using Cal Ale yeast of one kind or another, but the S&W website recommends rolling the bottle to make sure you get some of the yeast in your glass. It's meant to be hazy. There are no banana or clove flavours though. All of which leads me to believe that this is actually a Belgian Wit with an Aussie twist and a great beer it is too.
So, I've got my WLP400 starter in a demijohn under the stairs and at some point over the next few days, this May bank holiday weekend, I am going to brew this beauty!!
3.00 Kg Lager malt
2.00 Kg Wheat
20 IBU target 60 min boil
10 g Galaxy 20 min
10 g Galaxy 10 min
20 g Galaxy 5 min
30 g Galaxy flame out
30 g Galaxy dry hop
Mash schedule
43 C for 15 mins
50 C for 15 mins
63 C for 30 mins
73 C for 15 mins
76 C mash out
Yeast : WLP400 1.5L starter
1046 OG
1012 FG 4.50%

Will do. It's been a while Jim. Our new arrival has meant I've been doing more nappy days than brew days recently, but the boss has given me the day off on Monday, so I'll record the day for posterity.

Good luck with this. I had a pint in the Red Cow near Smithfield Market last week and I must say it is one of the best beers I have ever drunk (it was £6.30 a pint but this didn't dampen my enthusiasm)

I made this brew on Monday. In fact it was a double brew day I made a Thornbridge Kipling which is another one of my favourite beers. I will get the brewday posted as soon as I get a minute.
