wet hops...whos doing what
What it says on tin really ...in a week or two, due to lack of time/ space, my wet hop harvest beer will be a kit mod....probably wilkos pilsner, mixed to as high a volume as possible then loaded up with wilds for a short kill nasties boil...then whole works into fb, topped up etc. Rack off hops into secondary after few days

Brewed mine last Saturday.
50 L of Pale Ale, 95% pale, 5% wheat. 1kg of green hops

1kg in at flameout?Andy wrote:Brewed mine last Saturday.

Mine will be very similar to Andy's, maybe with a bit of amber or crystal malt. I'm happy to take a punt on the %AA so a wodge of hops will get 60 minutes and the balance in at flameout.

No, 380g first wort, 200g @ 20 mins to go, 220 @ 10 mins to go and 200g at power off.

Re: wet hops...whos doing what
I've got 2kg green hop on the way from Rob at the Malt Miller for Saturday (more available, order now for weekend delivery) http://themaltmiller.co.uk/index.php?_a ... ductId=612
The plan is:
90l pale ale - 72.5% pale ale malt - 20% extra pale ale malt (crisp lager malt) - 5% wheat malt - 2.5% biscuit
250g green hop @ first wort
250g green hop @ 20 mins
500g green hop @ 10 mins
500g green hop @ 5 mins
500g green hop @ 0 mins
No idea what this will turn out like - with an assumed alpha of 1% (about a 1/5 the normal number for Goldings) this makes 20IBUs, prob ok as I'm brewing to 3.6% session strength (this beer will go like the clappers, I suspect). If it's twice this alpha, that would not be too bad (slower consumption). Less alpha unlikely.
Will report back if it's any good!

B2B...out of interest what do you base your AA% on?

Re: wet hops...whos doing what
Aha, timbo, you spotted the weak link in my recipe design. Yes, to a degree it's an experiment (as all my beers are!), but with some supporting evidence that it could well succeed...
My logic for the recipe went something like:
- Typically I use about 5g/l of dried hops, aiming for an IBU around 25-30 for a low ABV (or balance factor of about 1.8 )
- The hops I'm hoping to use are fresh wet Goldings from MM, normally Goldings are a low AA hop say around 5% dried
- Rule of thumb seems to be use 5x the amount of wet hops, to compensate for the extra water content
- So the AA% will be about a fifth - and this is the big assumption - assuming that the drying process doesn't change the amount of AA content
An internet trawl confirmed the 5x ratio, and that you can successfully brew an all-wet hop ale with additions at the normal times. Indeed, one write-up concluded that more up front at FWH would have improved their beer.
With that as the background, I compiled the recipe above... fingers crossed that the hops arrive Friday and that it works.
Oh, I'm hoping to use BRY-97 as the yeast, got great results on an Amarillo pale ale recently, want to carry that aspect into the green hop.
Any observations / suggestions?

Seems sound to me! I worked on a 4x increase (wet vs dry) and we seem to have similar hop schedules.

I'm doing similar this weekend
40L Pale Ale, 90% Pale 10% Wheat, 1kg Wet Hops from MM.

Timbo
Looks like your challenge is not having a reference point for alpha.
Why not try a small hop tea boiled for say 30 mins, one of known alpha hops, one of your wild unknowns, and compare bitterness by taste. Use this to estimate alpha into brew software?

Hops collected and being repacked, they smell amazing!! Can confirm that they are Goldings and that the likely hood is the alphas are up on last years

Re: wet hops...whos doing what
I have a hop Triffid, I mean bine, in the garden, If I can fit it in over the weekend, I am pondering a green hop beer. Have no idea what to do tho. The hop I have is a fuggle. It's tempting to just throw 5kg of Maris in the mash tun, with a couple of hand fuls of carapils, then chuck a few handfuls of hops in at the usual times. Not sure tho.
I know most people make pale beers for the green hops, I have quite a pile of dark malts in the box, so am also pondering experimenting with some of those to give something slightly different. As I say, not sure yet.
