Simple stout

Post by quixoticgeek » Sun Jul 27, 2014 10:30 pm

Am trying to come up with a recipe for a simple stout. Something dark, around 6%, and easy drinking. For an Autumn evening after a long walk.

But I'm struggling for inspiration of where to start. I've never made a stout before.

Can anyone recommend a basic stout recipe I can use as a starting point please?

Thanks

Hop Back Entire Stout clone works wonders: ~5% each of crystal malt, choc malt and roast barley. I did 6% each in an extract brew ages ago plus 10% of this stuff called miel de caña. It's basically golden syrup with a dash of molasses.

I brewed this recipe recently, it's an absolute belter. Came out at 4.2% ABV so you would have to adjust the grain bill to get your 6%.

Bramling X Stout

Brew length - 23L
OG - 1.042
IBU - 46.5
Boil - 60min
Mash - 90 min @ 151 deg F

Gladfield Ale Malt 3.25kg (70%)
Flaked Barley 735g (15%)
Roasted Barley 345g (7%)
Dark Crystal 200g (4%)
Munich 200g (4%)

Pacific Jade (AA-14%) 25g @ 60min (29.9 IBU)
Bramling Cross (AA 4.9%) 35g @ 30min (11.3 IBU), 35g @ 10min (5.3 IBU), 30g @ flame out

Yeast - US05

I can't find it atm. It's on my desktop but I'm on holiday at my folks' place. It's on a website which I thought was Hop and Grape but I can't find it there.
Basically, I used DME and 6.7% of the three grains to 1.046 OG. If I was doing an all-grain version, I might be tempted to scale that back, but I don't have enough experience yet to say, tbh.
I used challenger hops to bitter and EKG late to 33 IBU. I've got my recipe book with me (as always; best read there is) and it says:
14 litres mind!
1250g DME
125g medium crystal
125g choc malt
125g roast barley
180g miel de caña 10% (if you can't get it, 150g golden syrup, 30g molasses might do it)

30g challenger 60min
10g EKG 10min
No irish moss
Notty yeast.

I left 7l like this, then added one of these chillies my mate had brought from Goa to 7l. Added just enough for a slight flavour at the end and for a few beads of sweat to break out.
Like I say, people thought I was a genius when they tried it. Can't believe I've forgotten the website I nicked it off.

For some reason wasn't getting email notifications on this thread, so hadn't spotted the replies.

Thanks everyone for your suggestions, plenty to think about there. Am hoping to brew in the next 2 weeks, so will let you know how I get on.

granted this is only about 4.5% ABV but you could just increase the pale malt content...

to make 23L OG 1045, FG 1011, bitterness 31.6 IBU, Colour 68.2 EBC

Grain:
3855g Pale malt
568g Chocolate malt
219g flaked oats
219g Torrefied wheat
110g black roasted barley
110g cocao powder - leave this out for a simple stout

mash 60 mins at 68degC, boil 90 mins

Hops:
Fuggles 44g @ 90 mins
Fuggles 11g @ 10 mins
Fuggles 11g @ 0 mins

ferment with Danstar Nottingham yeast, rehydrated as per instructions
