Steep.
Basically rest after flame out to let the hop bed sink and infuse.
Usually this time is taken to put immersion coil in to cool the wort but if you are using a plate cooler or similar device that takes the wort straight out of the copper into the Fermenting vessel then the steep/rest should be carried out.
The hop bed acts as a filter (assuming you are drawing off the wort from the bottom)

made this up last weekend. efficiency of my mash tun was better than 75% so ended up with a slightly higher OG.
Uses the London III wyeyeast and it is still fermenting - colour looks good - used Golden Promise Malt as the base malt.
Very good yeast head in FV thus far and is clearing nicely. Will fine in the FV before transferring to keg.
Will let you know how it turns out.
