Dave Lines Old Peculier recipe

Post by Trevs » Mon Oct 13, 2014 4:07 pm

Hi all, thinking of making this. The recipe calls for 4lb of dark malt (1.8kg), but my local HBS sells tins of malt in 1.5kg cans. Is one enough?

Also, the recipe calls for 60g yeast, but I presume a sachet of yeast will suffice as I don't have access to anything else. But can you recommend a specific type of yeast?

Thanks

I have just run it through Beer Engine. Use 2 tins of dark malt extract (3 kg) and reduce sugar to 700 gr and you should be bang on. Assuming an efficiency of 75 % Use the appropriate dried or liquid yeast

+1.

As far as yeast, one pack of S-04 would be fine, but not as complex as Theakston's top-cropped Yorkshire Square strain. If you wanna spend extra, White Labs WLP037 is supposedly descended from the same source, and BrewLab almost certainly has a version for sale too.

Unfortunately WLP037 is no longer available. It's a superb yeast and I use it all the time for my house bitter but how long for I am not sure because I have been reusing it for a year already :!:
