Just a quick post for anyone wanting a good starting point for their best bitter of about 4% ABV.
10BBL (360G)
100KG Simpons Pale Malt
100KG Crisp Maris Otter
25KG Crystal (130 EBC)
25KG Wheat
1.2KG Roast Barley
1.2 KG Chocolate Malt
65C Mash for 90mins
1hour Boil
Bittering hop; Pioneer
also flavoured with Cascade, Bobek, WGV
Approx 20 IBU
Coulor of 40 EBC
Fermentation with ; SO4 / US-05 in a 50/50 mix, (ie 250g of each per 360G)
Regulated to max 22C for 3 days, then cooled for 3 days down to 9C to rack and cask condition at 12C.
Approx OG 1042
2 weeks conditiong leading to FG 1009-8

Ok. How come it doesn't contain Pilgrim and Progress hops?!

Looking at the amounts of malts, I wonder if this recipe comes straight from the brewer...Dave, was it you?

Well, I can't go too far into the specifics but, take progress and add a reasonable quantity of Brown Malt. You should come up fairly close! More Chocolate and RB for the colour as much as anything else.

Around turn of the century I switched from lager to beer and Pilgrim was one of the first breweries I liked and I have been a fan ever since. They used to run a pub "The Riser" which must've been one of the first "craft" pubs outside London. Not only their own beers but proper imported lager from small German breweries, Belgian, American etc. Very pleasant beer garden. Good food. They always hired the prettiest student girls. Lovely.
