I have a number of hops I have collected over the past few months that for want of another word... I need to clear out!
Any ideas what I can do with this little lot (may need more than one recipe!)?
300g Topaz*
100g Ahtanum*
100g Atlas*
100g Aramis*
100g Sorachi Ace*
100g Mosaic
100g Auora
100g EKG
100g Challenger*
100g Magnum
100g Bravo
100g Galaxy
*These are the ones that have been in my hop box for a while that always end up not being used, and the ones I'd like to get rid of first
The others on the list I quite like, or have ideas for.
As far as malt is concerned I have quite a few speciality malts in stock, but will probably clear out at the end of the year and buy fresh going forward.

Aramis is lovely in a saison or wheat beer.
Challenger for bittering and Galaxy very late = lovely fruity, hoppy golden ale
Maybe swap the Galaxy with Ahtanum if you want to use that first.

Definitely. If you don't need it to be an authentic Belgian Wit, but rather an interesting wheat beer in general, I highly recommend the Mauri Weiss dry yeast. I think it would pair beautifully with Aramis hops.AnthonyD wrote:I was pondering doing a Wit next would the Aramis suit one do you think?

Bravo Seymour, once again.
I mostly use Aramis in Saisons, I've heard it goes well in other Flemish (French/Belgian) farm house ales too.
I'm sure it would go well with a Wit grain bill too.

With regards to Ahtanum, that's an intense citrusy/floral hop most often used in APAs and A-IPA, but my favourite way to use Ahtanum is at flame-out in a brown porter or roasty stout. Trust me, you'll thank me later.
