Does anyone have any experience brewing with fresh herbs?
I'm planning a saison and want to add thyme, but not sure how much or whether to add it to the boil or not.

I've no direct experience, but my worry would be either using too much and overpowering the beer or using too little and not getting any flavour.
Make a tincture maybe?? Extract in vodka or cold extract using one of those whipped cream thingys.
This way you could test the amount you need to add to the beer to get the flavour you want after fermentation. It also means you won't have a beer that is undrinkable if you use too much or the flavour just doesn't work out.
