What can I make with Pilsner malt + this stuff

I want to do a brew this weekend but am nearly out of maris otter but have some pilsner and lager malt that I planned to use when I have my fermentation fridge set up but its not. Please can someone recommend a recipe for the following to do a pilsner style beer using gervin GV12 yeast, I don't mind if its not authentic as long as it tastes good.
Ingredients I have are:
3Kg Pilsner malt
3kg Lager malt
1.2Kg Maris otter
1Kg Munich malt
Plenty of Crystal
250g malted oats
Hops:
150g Wai iti 4%
100g Saaz 3.07%
100g Hallertau Hersbrucker 1.6%
100g First Gold 8.3%
30g Target 12.17%
100g Fuggles 3.48%
I can use a max of 5Kg grain due to the size of the mash tun. Thanks for any help.

How about something like this. Try to keep the fermentation temperature low to keep it clean.

Cheers, if theres no other suggestions I will go with it, the bitterness looks slightly low would you be against adding another 5-10g of 1st gold? Also do you think adding 50g (as its an opened pack) of Wai-iti to the 5min addition would improve it?

If you'd prefer it slightly more bitter then yes, up the First gold. I've not used Wai-iti but it looks like it could be an interesting addition.

Step 1: brew Keith's recipe, that looks like a delicious Blonde Ale

Step 2: brew this with some of what's leftover, for a darker option
SEYMOUR & SIMON12 WAI-ITI MILD
22.7 Liters = 5 Imperial gallons = 6 US gallons

GRAINBILL
42% = 1061 g = 3.53 lbs, Lager or Pilsener Malt
31.5% = 1200 g = 1.2 lbs, Maris Otter
15% = 572 g = 1.26 lb, Crystal Malt
6.5% = 250 g = .55 lb, Oat Malt
5% = 191 g = .42 lb, Brown Sugar/Treacle (from your kitchen, added directly to beginning of boil)
TOTAL: 3.8 kg = 8.4 lb

MASH at 149°F/65°C for 60 min

SPARGE to collect 25.4 L/5.6 Imp gal/6.7 US gallons pre-boil

HOPS for 60 min boil
50 g = 1.8 oz, NZ Wai-iti, First Wort Hops
50 g = 1.8 oz, NZ Wai-iti, at flame-out, steep until chilled

YEAST
Nottingham English Ale/Gervin GV12 yeast


STATS
OG: 1040
FG: 1009
ABV: 4.0%
IBU: 24
Colour: copper

Thanks both of you, I like the idea of the mild as well would it be more suited to maris otter when I get some more though? Will be making your recipe tomorrow Keith with a little extra first gold. I will leave out the Wai iti as I have not tried saaz and don't want to over power it.

Cheers I got a bit of a scare when the hydrometer read 1.082 (over 100% efficiency) but luckily I have a second one that read 1.052 which sounds more likely. Strangely they both read 1 in water.

Officially, yes, though realistically it won't make a huge difference in the finished beer. As is, nearly a third of the grainbill is Maris Otter, which will provide plenty of those biscuity malt traits you want in an English Mild. No need to buy more ingredients for this one, unless you just want to.

Just stumbled across this old thread and thought I would add what it was like. To be honest not great it was just fairly tasteless with a creamy caffreys-ish feel very drinkable I just expected more flavour from 127g of hops. Making a mild next and buying some mild malt to try in it, is Wai-iti well suited to a mild I also have EKG, fuggles, flyer and target (100g each).

Well, Fuggles and Goldings would be the most traditionally English-style profile. Target would be a somewhat more modern substitute, though some people perceive it a bit harsh. Flyer would be even more modern, being a recent high-alpha English variety with resiny, almost Columbus/Zeus-like traits, not traditional at all but good as a twist. Wai-iti would be totally unprecedented in a mild, with it's zany New Zealand lemon/lime/mandarin orange traits, which sounds pretty dang cool to me (as per the recipe above.) I made a similarly audacious Sorachi Ace Mild which turned out nicely. I have grains measured-out for another mild, like you I'm still debating which way to go with hops.

All that to say...it's up to you, brewmaster's choice.

Just checked and I already used the Wai-iti anyway, Think I will go for a mixture of the traditional for this this one as its a style I have never tried (at all even commercially). If I like the style I will try it with wai-iti so time though.
