Back in the saddle

Hi everyone,

Not posted much on here for a few months (sorry about that :? ) Basically I joined the RAF back in October and i've not had time with all the training. But I've got a week or so off at easter so the plan is to brew a couple of beers and use up some hops i've had stored in the freezer!

I've not looked at beer recipes or infact the brewing process in 6 months so I'd appreciate it you'd give these recipes a once over- suggestions are more than welcome!

First brew will be a Stout:

Grainbill
1.00 kg Barley, Flaked (3.0 EBC) Adjunct 19.6 %
0.50 kg Roasted Barley (1300.0 EBC) Adjunct 9.8 %
0.30 kg Wheat, Torrified (3.3 EBC) Adjunct 5.9 %
3.30 kg Pale Malt, Maris Otter (5.9 EBC) Grain 64.7 %

Hop Schedule
50.00 g Bramling Cross [4.10 %] - Boil 60.0 min Hop 19.8 IBUs
20.00 g Progress [8.25 %] - Boil 60.0 min Hop 15.9 IBUs
3.00 g Irish Moss (Boil 10.0 mins) Fining -
20.00 g Willamette [3.03 %] - Boil 10.0 min Hop 2.1 IBUs
10.00 g Progress [8.25 %] - Boil 10.0 min Hop 2.9 IBUs

Aiming for 40.7 IBU for a 23L brew length, Fermented with WLP002 (my yeast in the fridge well past it so gonna actually buy some white labs vials for these brews as wont have time for a starter)

Next brew is a Pale ale:

Grainbill
3.80 kg Pale Malt, Maris Otter (5.9 EBC) Grain 88.4 %
0.50 kg Caragold (12.0 EBC) Grain 11.6 %

Hop Schedule
40.00 g Fuggle [5.17 %] - Boil 60.0 min Hop 20.8 IBUs
3.00 g Irish Moss (Boil 10.0 mins) Fining -
30.00 g East Kent Goldings (EKG) [5.00 %] - Boil 10.0 min Hop 6.0 IBUs
25.00 g Willamette [3.03 %] - Steep/Whirlpool 20.0 min Hop 2.3 IBUs

Fermented with Neals west coast ale yeast- Never used it before so again any advice welcome
Aiming for 29IBU again 23L at 4.5% ABV

Also, I will use brewnwater to treat my water with salt and acid additions

Welcome back! Everything looks good to me, except I'd cut the stout's flaked barley in half, perhaps replacing with more base malt. Happy brewing!
