SEYMOUR HOPSCOTCH
...being a delicious Scottish 80 Shilling ale, arrogantly Americanized with fruity/resiny dry hops

6 US gallons = 5 Imperial gallons = 22.7 Litres

GRAINBILL
40% = 3.48 lbs = 1579 g, Pale Malt
35% = 3.05 lbs = 1384 g, Mild Malt
10% = .88 lb = 400 g, UK Dark Crystal Malt
5% = .44 lb = 200 g, Smoked Malt
5% = .44 lb = 200 g, Flaked Maize
5% = .44 lb = 200 g, Molasses (added to boil)

MASH at 149°F/65°C for 90 min

SPARGE slowly to collect extra, in order to boil-down to target volume

HOPS (boil 60 min)
.35 oz = 10 g, US Simcoe (first wort hops)
.35 oz = 10 g, UK Flyer (first wort hops)
.35 oz = 10 g, US Simcoe (15 min)
.35 oz = 10 g, UK Flyer (15 min)
1.4 oz = 40 g, US Simcoe (dry-hopped for 10 days)
1.4 oz = 40 g, US Citra (dry-hopped for 10 days)

YEAST
McEwans Brewery Scottish ale yeast, available as Wyeast 1728 or White Labs WLP028. Give it plenty of time to finish the job, add dry-hops 1-2 weeks before bottling/kegging.

APPROXIMATE STATS
OG: 1042
FG: 1009
ABV: 4.3%
IBU: 40
COLOUR: reddish brown with beige foam

Can't wait to try this one. Also, wouldn't mind harvesting some of this yeast either. President's Day brew day?

Timothy, I'll bring a growler of this Hopscotch to share at the group brewday on Saturday.

I repitched the yeast in my Legacy Hoppy Wheat. That brew was recently moved to secondary, so I have a fresh slurry of McEwans' yeast to share too.

Hey, speaking of yeast sharing: have you noticed the Jim's Northeast Brewers Night thread? Eric very generously mailed me some Cullercoats Brewery yeast, which I'm in the process of building back up to a pitchable starter. Assuming all goes well with my brew, I'll gladly pass some of the resulting slurry to you too.

Enjoying right now. Thanks for the mini-growler!

Nice moderate caramel flavor and aroma. Dark bread crust with tasty melanoidins. Light raisin. Surprisingly subdued hop aroma given the dry hopping amount and time. Very balanced bitter backbone however, with pleasant bitter aftertaste and moderately resiny mouthfeel. Hoppiness and sweetness very well balanced. The GF stated that it reminded her somewhat of a brown ale, but that it was delicious despite her not being particularly fond of brown ales in general. Solid beer like usual!
