ESX Dark Mild

Hello again,

I've been on a little bit of a mission recently trying work out which brew of beer I'm brining to the festival, whilst doing so I've been reading into the old Ridley's brewery not far from me and the beers it served, as they did a mild like everywhere else I've been trying to find out some information about it, but there is bugger all that is easy to find, what I have got is the ABV, OG and that it was served from a wooden cask....and that's it.

I have made a recipe for my next brew which incorporates these few bits I have and my favourite bits of my own recipe as well as some modified bits from the Tolly Cobbold brewery. If anyone has anymore information on the the Ridleys Mild or any other beer I'd be very grateful if you'd share it.

Here's what I've got so far:

Captain Ted's 'ESX' Dark Mild

All Grain: 23 Litres.
Style: 13A. Dark Mild.
OG: 1.036
FG: 1.009
IBU: 15
EBC: 48
ABV: 3.5%
Balance: 0.42
Mash: 90 Mins @ 67
Boil: 90 Mins

Grain Bill:

3,145g Mild Malt (85%)
370g Crystal Malt - Dark (10%)
148g Chocolate Malt (4%)
37g Roasted Barley (1%)

Hop Schedule:

25g Fuggles Leaf 4.9% AA @ 60 Mins: IBU: 13
10g Goldings Leaf 5.2% AA @ 10 Mins: IBU: 2

Boil Additions:

3g Irish Moss @ 10 Mins.

Yeast:

WLP022 - Essex Ale Yeast - 1L Starter.

Notes:

Correct OG & ABV for Ridley's Mild.
Cask conditioned for 2 weeks @ 12 Deg/C.
Carbonate and dispense @ 1 Volume CO2.
Name taken from Ridley's ESX Best Bitter.
Dispense from cask and/or beer engine.

How about this one from GW's Brew Classic European Beers At Home - I presume this is the same one you are after?
Sorry can't say anything about the recipe as I've not made this one

That's champion mate, any chance of the hop AA he used in that recipe?

He lists the hops AA at the front of the book as being:
Goldings - 5.3
Fuggles - 4.5

That's not far off what I have in store now, thanks very much for that, know of anymore books with Ridleys recipes?

The Home brewer's database has all their beers although not all have percentages. I have brewed the bitter and Rumpus from there. Both came out well.

Thanks again Jim, I know how it is hopped now, interesting it has such a high IBU, I would have thought that would come out quite hoppy?
