Theakstons X B
Re: Theakstons X B
Hey Shimsham
I was at Theakstons brewery yesterday and they said there was a blend of 5 different types of hops in the XB I remember challenger, target, bramling, cross and fuggles being mentioned but as for quantities and timings I'm not too sure.
Other facts I picked up were they mash for an hour at 66C and ferment in open tanks and they have their own strain of yeast and they dry hop the barrels.
Personally the XB wasn't my cup of tea, too sweet and the hops weren't punchy enough for me.

This is Theakston's Best according to Dave Line:
25 ltrs
Pale malt 2800gms
Fl Maize 400gms
Demerara 200gms
Fuggles 60gms 90 mins
Goldings 30gms 90 mins
Goldings 15gms 15 mins at switch off
Goldings 10gms at secondary
Yeast 60gms
Irish Moss
He collects 20 litres of wort then after boil tops up to 25 ltrs with cold water.
(gelatine at secondary and 60 gms soft dark brown sugar for priming)
However, as I am learning, these hopping rates may be on the high side.
