If anyone's interested in this strain of Yeast I've been told the actual strain is B1 supplied by Brewlabs... And is the genuine Vaux yeast.

Going to give it a whirl.

I'm a brewer and brewing historian ;
I've seen the old Ward's brewing records @ Sheffield Archives , and transcribed a lot of the old Ward's beers : 1875-84 , and from 1927 - 54

How Do ,
The Ward's records are all in a bizzare code for the mashing etc , so there's a bit of educated guesswork there, based on reading old manuals such as Lloyd Hind etc , but i believe that they're pretty Bob on for procedures on brewday ! , I'll type the Bitter up and hopefully be up in a couple of days which one though ??? , 1881 ,1927, 1939, 1948 & 1956 .
I've also unearthed the recipie for Clarkson's Old Brewery , Barnsley Best Bitter as brewed @ Tennant's in late 1956 after production stopped in Barnsley , @ 1.037° ~1.007.5° , 32 IBU and approximately 3.75 % .

Best Bitter , as brewed at Tennant Brothers ,
Exchange Brewery , Sheffield
Monday 5Th November 1956
O.G : 1.037 Racking Grav : 1.007.5 Final Grav : 1.005.5
32-4 IBU ; 3.75% ABV.
MALT
Marris Otter 32.25 % Pale Ale 17 %
Mild Ale 33.25 % Flaked Maize 3.5 %
SUGARS
Malt Extract 1.5 % No 1 Block Invert 4.75 %
No 2 Block Invert 5.25 % Lactose @ .17 g per Litre
(Add the Sugars @+ 110-115 into the boil , Lactose@ Let off)
COPPER : A 2 hour boil , 1St Charge @ Copper Up , Second Charge @ + 75 , Third @ + 100-105
MASHING & SPARGING
The mash temperature should , be 146 Fahrenheit at the ratio of 2.635 L/Kg , and for a Two hour step , then raise the temperature to 150 – 152 Fahrenheit @ 1.455 L/Kg at the + 120 minute mark , and allow a 35 minute stand before setting taps , SPARGING : from + 160 minutes @ 165 Fahrenheit @ 3.000 L/Kg , until the last runnings @ 1.005.


HOPS
QUALITY IBU CHARGE GRAVITY
Fuggles 12 1St 1.026
Goldings 10 – 12 2Nd 1.030
French Fuggles 10 3Rd 1.033
Racking Hops : 1.25 g (Max on a 5 gallon brew) of French Fuggles


Yeast , Pitching & Fermentation
2.75 g per Litre @ 59 Fahrenheit ,and allow up to a top heat of 66 – 7 before bringing down to 64 F , rouse 12 hours after pitching and until 1.010 ; use a Non Square system Yorkshire Type Yeast ; reduce to 57-8 Fahrenheit @ racking gravity , and allow a 2 day Diacetyl rest @ 58 F for two days prior to racking into a barrel.
PRIMING AND MATURATION
PRIMINGS :
Candy Sugar @ 3.25g/litre
Dextrose Monohydrate @ 3.25g/litre
Caramel @ 1 g/l
I`d recommend making up the primings , and adding them to the F.V @ RACKING GRAVITY , allow say 12 -24 hours @ 58 with the primings in before transferring to a barrel and adding the Racking Hops as above, mature for 2 weeks @ 52-4 Fahrenheit ; add finings @ 36 hours before opening to drink , then roll round well , set up for dispense and allow 36-48 hours before trying ; ENJOY !! ;)
