Wheat malt substitute

Post by MashBag » Sat Oct 14, 2023 6:31 am

Has anyone replaced wheat malt with raw unprocessed wheat.

I have wheat to hand, but spend stooput money for malted wheat, which I use very little of (12.5%).

Thoughts? Tips? Warnings?

Plain flour and use a smaller percentage

Randy Mosher recommended this for those who have a problem making cloudy beer =D> =D>

Yes indeed. Cloudy was not really what I was after.

Test is on. Crushed wheat same weight. Protein rest applied. Let's see. I am expecting a flavour boost.

Plain flour to make beer cloudy is in the last 10 minutes of the boil
What I was recommending is using flour in the mash as normal
No difference to using wheat really

Interesting - flour is also very cheap.

I had a pint from the local micro that was not a NEIPA but had the colour of one.

Do you think they are using just plain flour?

Most of my NEIPAs drop perfectly bright too quickly!

Quick update.
Ran the same recipe, with farm gate milling wheat. Graded & ground, adding 500g

In the fv, a lot more protein methinks. Foamy dirty head, and some large jelly babies.

Tasting at bottling (day 7): Hmm. Not bad. Slightly more wheaty earth flavour like a raw beer. Yikes I hope that passes 😁
