Ok, Delboy I have another idea for you. In the late 1800's during the great German migration, some brewers imigrated to Mexico and brought their brewing knowlege and thirst with them. They started brewing Vienna lager but it was a little lighter than what was being done in the old country. Today, they still make the style but actually add a little corn to it in an attempt to lighten it up. Here in Texas, we get some Mexican beers my favorite being Negro Modello (it sure beats that skunky crap Corona which they put a lime into to cover up the bad taste). I don't know if they add corn to that beer but many others do reportably.

I tried making a clone which turned out very well but did not taste that much like the original (so who cares right, I liked mine better). My attempt was heavier and pretty dark because of the small amount of chocolate malt I put into it. Anyway, my suggestion is to make a Mexican Vienna lager and throw in some of your maize, I bet you don't get much of that over in Dublin. Your buddies over there will think you are way over the top and I bet you will love the beer (a light Octoberfest with a Mexican twist).

When I get around to doing my next attempt, I am going to pull out the chocoate malt and add some flaked corn to make it more of a summer beer. I basically followed the directions in a clone brew book since I had never made the style before but now it is time to start screwing around the the formulation.
