Benjy,
any idea on a sub for the flaked maize? Just leave it out? Obviously, very different, but, what about (gasp) cornmeal?

I think the best substitute for flaked maize would be sugar. The maize doesn't contribute much or any flavour, it's just used to lighten the body of the beer and lessen the maltiness, so leaving it out or using corn or cane sugar would be the next best thing. Even the Harvey's brewer, Miles Jenner, says they mainly use it in the Sussex Best because they've always done so, it's just tradition.
