Hold on a sec... I've seen this a few times here or there. This, or that, is a 'variant' of Caroline. Caroline is Caroline. If you change it, it's not Caroline anymore! It's like saying "Hey, I've done a variant of TTL, but with 7lb of Pale malt, 2lb Flaked barley, 1lb Roast Barley, Northdown and Goldings hops, and Guinness yeast!

The recipe on this thread is nice, but Caroline it ain't, not even a close variant. What is does sort of resemble is the recipe Wheeler calls 'The Best Beer in the World' which is 100% pale malt, copper hopped with Goldings, and nothing else. OG1055. That may be where the confusion arises, as it's the first recipe listed in 'Home Brewing'

THIS is Caroline - directly from the book.

Pale malt - 3.5kg
Crystal malt - 350g
Flaked Maize - 500g
Invert Sugar - 400g
Goldings - copper 110g
No late hops, no dry hops

OG 1041

Hi Steve,

I don't know where you got your recipe but in my book I have the following recipe for Caroline's fine Ale....

Pale Malt 6.2 kg
Goldings 135g (90 mins)
OG 1.055
55 EBU

And that's it. Plain and simple. Not exactly what was posted at the start of this thread but I'd say it's close.

There are also 5 versions tagged as "Selectastrength" ranging from 1.035 with 40 EBU's to 1.060 and 55 EBU's.

Seems strange that yours differs so dramatically. Maybe Wheeler has a Caroline fixation and hence names all his beers "Caroline".

/Phil.

Ditto re: Phils recipe version. My Wheeler book lists Caroline with the selectastrength recipe and uses 100% Pale with 100% Goldings.

I've got the same one as SteveD's. It is subtitled 'Caroline's favourite', so maybe she liked his later versions more?? Woman's prerogative, etc...

Sounds like Mr Wheeler needs to be a little more inventive with his names
