Fullers reportedly don't use flaked maize in their beers any more, so I would just up the pale malt to compensate. Flaked maize has a different extraction rate to pale malt, but I'm not sure how much it differs by off the top of my head, so I'll leave it to someone else to say how much pale malt to use.Kit_Maker wrote:Going to give Daab's recipe a go but I don't have any flaked Maize.

I recieved my copy of Zymurgy today, and there's info about Fullers ESB written by John Keeling , evidently he's the Director of Brewing at Fullers. Anyway, the recipe he quotes them using is 95% PA Malt, 5% crystal, plus chocolate malt for coloring. Target hops at the beginning of the boil, Northdown and Challenger as late copper hops. Evidently they parti gyle, using 2 mash tuns, the first brew being Golden Pride, then later runnings for ESB, London Pride, Pale Ale, and Chiswick.
Oh, they burtonize the water for all beers except the Porter.
