Does the grain bill affect the taste?

Late hops are for aroma. They have little effect on bitterness.

Not necessarily so - it depends on how many you add. If you look at the recipe, the earliest hop addition is 20min from the end, and yet still gets ~24IBU (with massive hop presence!). There was a load of stuff about hopping and when it can be carried out in the last but one Brewers' Contact I think too.

Having read a very good article on the subject of late hopping on the Mr Malty website it sounds like it produces a similar effect as FWH of which there is an interesting thread in the AG section.
