That sounds more like it. I don't want this to be too dark like a schwarzbier, looking for a dark brown malty lager 50-60EBC.

I'm gonna brew this one on Sunday. I've got my WLP833 starter on the stir plate ready to crash cool tomorrow. I think I'm gonna keep it simple and go 50/50 pils & munich malt. 100g Cara III as suggested by 196osh and all Tettnang on the hops to get 20IBU.

My problem is I always want to complicate my recipes by adding a bit of this and a bit of that. My original recipe for this dunkel included 200g of amber malt!!

Saying that I've just tasted my first Vienna lager brew from last year (brewed back in November) and that was a right hotchpotch :- Pilsner \ Vienna \ Munich malt \ Carared \ Torrefied Wheat \ Tettnang & Saaz and I have to say it's a beauty!!! :D Happy days!! :beer: Can't wait to bottle my all vienna malt lager!!

One school of thought is to use a fair bit of carafa but don't put it in until near the end of the mash. Supposedly that way you get the colour without the roastiness.

I find with the carafa sp, dehusked stuff. That you don't get too much roastiness that much. But leaving it till the end of the mash would work great to reduce it to almost zero.
