Seymour Ringwood Boondoggle Clone Recipe

Summer Seasonal Golden Ale. First brewed as a summer special for the Hogshead Chain of pubs but in 1996 was re-launched to the whole market. Cask was changed from 4.0% ABV to 4.2%, bottle version is 5%.

Often compared to Timothy Taylor Landlord and Caledonian Deuchars IPA. Neither brewery has published many specifics, but worthwhile clone recipes all fall within 30-40 IBU. All due respect to Graham Wheeler's clone recipe, but Landlord is almost certainly 100% pale malt (containing no black malt), and it sounds like Boondoggle is too. Many people on Ratebeer, etc, describe Boondoggle as "grainy" and "biscuity." The best Landlord and Deuchars IPA clone recipes call for Golden Promise malt, which also fit that description, so Golden Promise sounds like a perfect fit here, too. Reviewers also consistently describe a dry bitterness and finish, but with prominent citrusy (lemon in particular) flavours and aromas, so it's obvious to me the Fuggles is used for bittering and First Gold for late addition(s). It has a deep golden color/light amber color which makes me think you should give it a hard rolling boil for at least 90 minutes for a little kettle caramelization. It's always possible Ringwood uses a little caramel colourant, too.

Ringwood's proprietary yeast is certainly another major contributor to the beers overall impression.

6 US Gallons = 5 Imperial Gallons = 22.7 Liters

MALTBILL:
100% = 8.95 lbs = 4.06 kg, Golden Promise malt

MASH at 153.5°F/67.5°C, 60 minutes or until converted

SPARGE at 171°F/77°C to collect at least 6.75 US gal/5.6 Imp gal/25.6 L

BOIL as hot and hard as you can, at least 90 minutes. Afterwards, if you lose too much volume through evaporation, you may need to top-up with sanitized water for correct original gravity.

HOPS:
1.1 oz = 31.2 g, Fuggles, 4.3% AA, 90 minutes remaining
.5 oz = g, First Gold, 7.5% AA, 30 minutes remaining
1 oz = g, First Gold, 7.5% AA, 5 minutes, steep until cooled

NOTES: do not use wort chiller for this brew, lengthy ambient cooling is essential to our hops flavor and aroma. Add a pinch of calcium carbonate in mash, pinch of gypsum near end of boil to make the hops pop. Irish moss near end of boil for clarity.

YEAST:
Ringwood strain, probably Wyeast 1187 or White Labs WLP005, ferment at 68°F/20°C

PRIME bottles/cask with 1/3 cup cane sugar, pre-boiled with some water.

STATS assume 77% mash efficiency and 74% yeast attenuation:
OG: 1.043
FG: 1.011
ABV: 4.2%
IBU: 31
COLOUR: 5°SRM/10°EBC

Yeah, I kinda buried that Landlord clone recipe in there. I don't know if everyone's seen that, but it would be an excellent brew too.

Very good work!

I live in Ringwood, next time I do the tour i'll try and push them for more info, its always good as you get to see what malt/hops they have lying around.

Based on last time I was there (last summer) i'd be astonished if they use Golden Promise malt, they are owned by Martsons and the accountants run the show. Last time the only malt around was hundreds of bags of Simpsons Malt (cant remember if was Maris or Pale), and they used Cholate and Crystal in the tasting, no evidence of any others.

Defiantely their own yeast strain, its very distinctive. I think Graham used to work with or at the brewery so knows his stuff, the other brews follow a similar pattern in his book so my bet would be its probably a version of 49'er without the crystal.

I'll let you know if i find out anymore.

The brewery could certainly use Maris Otter, I obviously don't know, I just think Golden Promise would be a good way for a homebrewer to dial-in the "biscuit" description so often lavished on Boondoggle. My experience is that Maris Otter displays some of that too, though, right?
