Smells beautiful. Nice big kreusen, perfect colour, no off notes at the mo \:D/

Fermentation finished

Fermented at 20.9C pitched at 19.2C

Day 7 1013. Small kreusen persisted. roused in
Day 8 1012. Kreusen fallen

Will bottle in 7 days

Bottled this tonight, the yeast was not flocculated as you would expect with a hefe - primed to 3.5 vols. It's going to be a 6.0%er , the taste was YUM. Lovely , banana bias, certainly reckon decoctions make a difference!

Only 10 days after bottling, and it had to be tasted!

I have to say I can tell that this has been triple decoction mashed. The layers of caramel sweetness are there and the head is not persistent indicating the complex protein chains have been broken down. This was very well carbonated but didn't turn into a foam party.

Very much like a Belgian Wit on the yeast aroma but not as sharp.

Oh yes there is banana on the nose - but not madly!

And as a lucky bugger who has managed to taste a bottle of this I am Highly impressed. You can tell immediately from the pour that it is a wheat based beer - the cloudyness is spot on and a subtle waft of bananas can be detected. But the taste....the taste is magnificent - A proper tasting wheat beer with plenty of banana character on top. The condition was spot on too - a lovely pssst from cracking the top to a mild fizz on the palate - somewhere between a lager and an ale. Suprisingly seeing as this is 6% the alchohol is well hidden, probably behind the full body sweetness. Can I have more please sir!

This one is mine, mine, all mine. something happened during that decoction process. I got taken over by a dark force of selfishness. It's my precious! My lovely precious. No one must know about my precious...... :lol:
