Harvey's Sussex Best Bitter Clone Recipe
Re: Harvey's Sussex Best Bitter Clone Recipe
Didn't hit the nail on the head for me. I struggled with the yeast in terms of clearing and it dominated the flavour to the detriment of malt and hop flavours. Not rushing back to Sussex 1. Also it very much reminded me of Sussex 1004 yeast in the end, despite being assured it wasn't.

I would be interested to know how you prepared your Sussex1 slant? Did you gradually step up and did you use stir plate?SiHoltye wrote:Didn't hit the nail on the head for me. 30mls in jam jar with occasional shaking, 150mls on stirplate, 1700mls on stirplate.

Re: Harvey's Sussex Best Bitter Clone Recipe
I have read your post several times, with much interest in the last 6 months and the photo's give me fond memories of the two tours I attended when I lived in Sussex. I was an avid Harvey's drinker and home brewing never occurred to me back then. I live in Northamptonshire now and haven't been that far south for about 5 years. When I did go down there I would call into the brewery shop and buy one of those 4 pints plastic bottles of BB. I plan to take make a visit again soon and hopefully get a sample of their yeast and make my own slants. If I fail to do this I assume I could buy one of their 4 pinters again and make some slants up from that.

Yep, good plan! They should be happy enough to give you some yeast. I'm really excited about your ventures in this. PLEASE do a brew post.
In fact... the next time i'm there (and I was yesterday... doh!) I'm going to call in and ask for some. I'll post you some too. We can brew something at the same time then

If you find you end up with more slants than you need......................floydmeddler wrote:Yep, good plan! They should be happy enough to give you some yeast. I'm really excited about your ventures in this. PLEASE do a brew post.

Re: Harvey's Sussex Best Bitter Clone Recipe
I've got Seymour's version on the boil right now.... Tailored for BIAB and 10L...
Hope it turns out well!

Good luck Clubber.
I've just bottled some mild I made with WLP017 Whitbread and it was quite Harvey's esque in as much as the esters complimented the residual sweetness. Hmmm. I might have to brew Seymore's formula

Well done! Keep us posted on how it turns out.Clobber wrote:OG was 1.059... Not sure how I managed that!
I just ordered more Progress hops today. They're extremely rare in the US. I've never even heard of anyone else using them over here, but I really love 'em.
Re: Harvey's Sussex Best Bitter Clone Recipe
Hi Seymour, Any idea on hop quantities? I plan to give this a go the weekend.... I do not intend in using flaked maze but flaked barley.seymour wrote:Harvey's Sussex Best Bitter/"BB"
Harvey's/Harvey & Son/The Bridge Wharf Brewery - Lewes, East Sussex, UK
OG: 1041
ABV: 4.0%
Grainbill: 88.1% Maris Otter, 6.8% Dark Crystal Malt, 5.1% Flaked Maize (just do it, don't sneer at the corn adjunct, you'll see)
Bittering Hops: Progress (60 min), Bramling Cross (30 min)
Aroma Hops: Fuggles, Goldings (at flame-out)
IBU: 34-40
Colour: clear light amber
Yeast: Harvey's proprietary strain, repitched continuously for over 50 years! (some theorize it's a top-cropped descendent of Whitbread-B, if so, then S-04 would get you in the ballpark)
