Ahtanum is big enough to come through. Just look at Brewdog who use tuns of it, as do stone so your in good company for a hop monster. I would use some for late bittering to raise the ibuvvand dry hop with it and the chinook.
But go with your gut... It's more ambitious than I attempted on my first brew but it will be great tasting just think the cascade would be wasted when you have enough hops there to blow The Old hop tasting buds :D

I will be adjusting my water to suit the amber balanced profile on bru n water so will be adding gypsum to the brew.
I'd be using the pale ale profile for this one personslly.
Is that from personal experience? I haven't treated my water before and note that I need to add a lot to it for that profile.

Yea. Any time I do something pale and hoppy I use that profile. It gives you that real hop zing. Make sure it ties up with your desired mash pH. I've found the predicted pH in Bru'n Water to be quite accurate:

Many thanks everyone.

Hi guys.

I popped my cherry yesterday and it went quite well although I managed to collect too much wort, pre boil, so my calcs must have been slightly off.

I also had to tip the boiler back and forward to collect 23 litres in the fermenter.

But so far, so good. I cant wait to do no2 now!!

It's probably best not to do that as you end up with trub in the wort which you went to all that trouble to avoid. Better to end up with slightly less or top up with water.
Best wishes

I think I will be aiming for a 21 litre brew length in future

This thread illustrates one thing very well - you'll never get get a room full of brewers to agree how to make a beer!
In or near Norwich? Interested in meeting up monthly to talk and drink beer? PM me for details.

Bottled this on monday night after two weeks in the fermenter. Recorded an fg of 1.014 after starting with 1.054.

I dry hopped with ahtanum pellets and I blitzed up chinook leaves in the blender with a litre of cooled, boiled water.

I chilled it as far as I could in the fridge prior to bottling to allow the hops to drop but I still had a layer on top of the brew.

I bottle directly from the coopers fermenter via the tap with a bottling wand and, fingers crossed, I hope I don't have too much debris in the finished beer.

Already planning ag no2 which will be made next Sunday.
