No worries Vossy. Thanks for checking the info.

I have some Danstar Nottingham, which is handy, but I have also ordered the T58 which is described as having an estery and peppery flavour and dry finish. Sounded like what you were commenting would compliment this brew.

:idea: I might do a 5G batch and a split fermentation with both yeasts. Sounds like fun.

Hi Matt, I'd use the T-58.

As you said, when 'm going to do this ale again, it will be with a T-58 type yeast or similar.

This yeast will bring SS into taste line, with Youngs Golden Champion which is one of my favourite bottle conditioned beers.

Finally got the chance to brew this today. Just wrapped the sleeping bag on the mash - bang on at 149F.

Later …

Right, all done and just pitched the yeast. BUT I've got 18 litres @ 1049.

Some stuck mash probs :x

I don't know about topping up to water it down - how to and how much. Anyone? Or should I just leave it.

Just stumbled onto this! There is a calculation for adding water on the forum somewhere....anybody :?

If you like the Styrian Stunner then try this one...it's nuts :shock:

Premium Pale

Pale Malt 4.5kg

Styrian Golding Hops (3.7%) 135g (start of boil)
Styrian Golding Hops 27g (last 15 mins)
Irish moss 5g (last 15 min), or whirlfloc tab

OG 1040
FG 1009
Alc cont 4%
IBU 40
Mash Liquor 11 ltr's
Mash Temp 65 deg c
Mash time 90 min
Boil Time 2 hrs
Final Volume 23 ltrs

I thought this ale was delicious but the bitterness reminded me of grapefruit pith :shock:

I replaced the Styrians with Aurora Super Styrians, changing the quantity to suit :wink:

No worries about the water - I left it as it was in the end.

I might try that recipe. I was wondering about a late hop addition tweak to the original recipe.

Have you tried Bath Ales 'Wild Hare'? That is a bit grapefruity, but is my fave at the moment.

IMO it can only improve the ale for the better 8)

Sorry had to resurrect this thread, been off the forum for a bit over Chrimbo cause of the computer dying on me, great when they work, expensive when they go 'very' wrong.

Not to worry, because my Styrian Stunner has turned out excellent, thanks Vossy for posting the recipe, me also being a fan of Youngs, Champion in particular, I just had to give it a go.

I stuck to the recipe, apart from I used the T-58 yeast, and yes it does give it a different taste to that of S-04, the head retention is very good also, and as you can see with lots of tiny bubbles rising ages after you've poured it. It has to be the quickest clearing beer I have ever made, maybe it's the different yeast. I left it at 1050 OG and it got down to 1009 which gives a nice 5.7% ABV. A lot stronger than I meant, I must have gotten good efficiency that day. The bottles were primed with 5ml glucose per litre.

The sediment is quite stable already, even though it's not been in the cool yet to mature. You only lose that last cm of the bottle, although this should improve with time. The sediment is quite white compared to that of S-04 which is more of a cream yellow.

My lovely wife got me a bottle of Champion so will post a side by side comparison picture later.

I've still not layed my hands on T-58, so I'm interested in the taste...

Does it give a spicy/peppery taste at all?

Does T58 heavily flocculate like Safale 04 :?:
