I know this isn't the right thread to say this in (and apologies to the OP) but Graham, your book has been my bible in the last 12 months (ish) that I've been doing all grain and I couldn't have done without it, so thank you very much. I also was thinking along the "print on demand" lines and was going to suggest it myself but I see others have beaten me to it. You can't beat having an actual paper book sometimes and I think this is one of those times. I really sympathise with your frustrations dealing with camra et al, but I hope that the large and appreciative readership makes up for it a little :D

Could I be so bold as to return to the original subject of the thread :D

Just to add, I've brewed GW's TOP but I couldn't stop myself from adding a 454g tin of Lyle's Black Treacle - worked a treat in my Oatmeal Stout so I thought what the heck. And do you know what?...worked a treat in the Old Peculiar too

Thanks again Graham for a great book =D>

trickybrew wrote:Hi :D as anyone brewed got close to Theakston Old perculiar, as I do like this ale and thinking if any has mastered it, and can pass me the recipe I brew this next, I no I can get this from a brew book but for some of you brew daddy's out there must have got it almost right, any help will be appreciated.
Thanks
A while back, I was requested to brew a cask of something 6.0%+ for a special occasion.

I like Old Peculiar, so I based the recipe on GW's, but made a few changes and upped the strength a little. It came out at 6.2%. Everyone who tried it loved it.

50 Litres, 27/05/10

OG 1.064 FG 1.017, IBU 26-27, EBC 75, 90min mash @ 66C, and 90min boil.

Maris Otter 12000gms 89.82%
Crystal 650gms 4.87%
Choc 460gms 3.44%
R. Barley 100gms 0.75%
Tor. Wheat 100gms 0.75%
Black 50gms 0.37%

Fuggles 100gms 90mins
Golding 25gms 10mins
Golding 5gms 2mins

Nottingham yeast. [I pitched onto the yeastcake of a 4.0% mild which I'd brewed the previous week - FG was 1.017 in under 48hrs @ 22-23C!]

It's worth doing, the Carafa Special lll makes it smoother. It's funny i'm not keen on the bottled version, I think there is a lot of taste difference between the bottled version and the draught.

I have now received the GW book that has been on order for over 3 months, so I too will be brewing TOP in the very near future. Must do the Sarah Hughes Ruby Mild first though.
Thanks for the people sharing their tweaked recipes to. Gives good ideas for subtle changes.
