Have had a few Hopheads in the pub but had one last week that felt like it was almost burning the back of my mouth! Was very good ! Anyone know what that might have been or more importantly how to recreate it? I'm assuming extra hops somehow?

Brewing this tomorrow and can't wait. Have posted the recipe above already. Basically it's SiHoltye's recipe but adjusted to my brewery. Also added some torrified wheat for head retention. Shouldn't add any flavour.

Hophead Clone
8-A Standard/Ordinary Bitter
Size: 25.0 L
Efficiency: 85.0%
Attenuation: 75.0%
Original Gravity: 1.039 (1.032 - 1.040)
Terminal Gravity: 1.010 (1.007 - 1.011)
Color: 4.23 (4.0 - 14.0)
Alcohol: 3.83% (3.2% - 3.8%)
Bitterness: 28.1 (25.0 - 35.0)
Ingredients:
3.6 kg Maris Otter Pale Ale Malt
200.0 g Cara Malt
100.0 g Torrified Wheat
25.0 g Cascade (7.6%) - added during boil, boiled 90 min
60.0 g Cascade (7.6%) - added during boil, boiled 5 min
60.0 g Cascade (7.6%) - steeped after boil, 20 mins at 80c
1.0 ea Fermentis US-05 Safale US-05

Had a pint of Hophead at The Evening Star Pub then went home and sampled my own from the fermenter. Damn it already tastes very promising!
Had an interesting chat with the bar man. He informed me that the brewery have recently been using Amarillo hops in their Hophead! He wasn't 100% sure why though...
Will suss it out some more next time i'm in.

I remember a Hophead Amarillo cask at the opening do, all badged up proper like. Very nice it was too! Hophead was there to in it's usual form.

OK. So my gravity is reading 1005 at the minute. Is this normal for S05? Have never used it before. OG was 1036.

Just bottled mine at 1009 down from 1040 also using US05 so i have no idea what is normal i did notice however that the yeast bed wan't very floculent and i lost a couple of pints to it.Think we will have to see what more regular users of the s05 have to add

Heard it was quite powdery Pas which worries me a little with regards to clarity PLUS I don't want to lose any pints!

Right. Down to 1003 today. Starting to pi$$ me off now as this yeast has already attenuated to 91%!!!
Would never want a beer this dry. Any one know why my S05 is attenuating at a higher % than anyone everyone else? Mashed at 66c.

1008 was DRY! in one of my beers, spoiled the body totally and dulled the hops! (though this was yeast from work, not US-05)

I had US05 finish at 1004 before from 1044, but oddly, it wasn't actually that bad. (I actually suspected my hydro but then did a calc and correction with the refractometer, and it read the same). No idea why - I don't think it should ever attenuate that much...

Tempted to tip it away as I simply don't want 40 bottles of beer this dry. Hop character is dwindling big time too.

Took another reading and it is actually at 1004. Took a taste again and perhaps I am over reacting as it is quite nice. Will leave it for another few days and if it keeps dropping then I'll ditch it.

Even though mine was very dry and 'crap' at the first tastings, it improved and regained some of the hop character in the bottle... its not prefect like I wanted it, but its drinkable... makes a nice summer Shandy with lemonade

Brewed this today, took me bloody ages to find where my wife had safely but the Cascades.
