Duncan's recipes work well, and don't have that "this is made of sorghum" flavour of those kits.

However, I now do any standard kit I fancy and add a vial of ClarityFerm. A lovely little enzyme that rips the proteins apart, intended to reduce haze but with a side effect of destroying gluten.

I've used clarity ferm in a few brews and it does seem like a perfect solution. However, since I've got no way of testing it after treating with clarity ferm I've decided it probably isn't a good idea for me to drink it. The brews I've made with clarity ferm don't give me any symptoms, but having seen the pictures from my endoscopy of the physical internal damage done by eating gluten I don't think its worth the risk to trust the clarity ferm to remove all of the gluten. As such I'm looking for an alternative that tastes something like real beer that I can be sure is gluten free which is how I came across this recipe.

How much time space and effort are you willing to put in?
You can malt millet and after roasting it tastes almost identical to barley malt.
I've only done very small quantities but it's something I intend to try again sometime.
Doesn't have quite the sugars of barley though so you either need a lot or you add sugar

Thanks. I'd happily give the millet a go at some point but it looks like a huge amount of work so not something I could do regularly. I'm really looking for a gluten free alternative to a standard kit that i can knock up on a regular basis to keep me stocked up with beer. This looks like it might be worth a go, despite the seemingly random ingredients. Feedback seems generally positive so it's got to be worth a go.

I've been and bought all of the ingredients for this today. It works out about £20 all in so not the cheapest - and I had to buy a lot more than I need for some of the ingredients so it's actually about £40 I've spent. I hope it's worth it. Only changes I'm making are substituting the Bovril for marmite and will prob swap northern brewer hops for something I already have (probably fuggles/goldings).
Will report back once it finished.

I haven't found on but the article here mentions Briess who make a sorghum "malt" from grain not cane that suggests something close, along with other ideas on how to approach the problem.
