I will be using my last sachet of Mauribrew Ale 514. It was so good in my last mild I thought it would suit this to a tee. I have Stone Recipe for strong mild, based on Lee's Mild. I may put that on the yeastcake next week.seymour wrote:Man, oh man, I can't wait to hear how it turns out. Best of luck! Which yeast strain are you using?

As usual, I love the way you think.
Re: RON THROWS US A GEM: 1867 INDIA PORTER!
if this beer is going to taste anything like it smells in the fermenter I am in for a treat. The all pervading aroma is of Jamaican Ginger Cake warming in the oven.

Finally getting round to brew this tomorrow. Grains are weighed, BP yeast slurry in the fridge taken on Monday from the previous brew, hops in the freezer. Just gotta assemble the brewery and get the liquor sorted and I'll be good to go...

How's your one shaping up?
Re: RON THROWS US A GEM: 1867 INDIA PORTER!
Coming along Nicely, its all bottled. It was a spit of a beer I made a year or two ago at this stage "Accidental Porter". That turned into a nice beer after six months so I have a feeling this will head in the same direction
Quite mellow and smooth coffee flavour with hints of tarmac and coal steam engine.
Quite complex. Its drinkable now but I am determined to let it have a couple of months at least.

What attenuation do you get from that yeast oz? Any mash peculiarities?
Re: RON THROWS US A GEM: 1867 INDIA PORTER!
Mashing around 66celsius it tends give me low 70s%. Looking back most often it's in the 72%-73% region, pretty consistently. Only once can I see I have got less than 70% for it, which was a porter where it gave me 69%...nothing unusual about the mash though.

Cheers OZ,
I have just had a sample bottle and its coffee moving quickly to liquorice and then sea squill.

Its an ingredient that often occurs in old fashioned cough medicine as an expectorant. Not Buttercup Syrup more like Covonia.
In a NICE Way of course.

I like the sound of this. Just ordered my malt, and looking to use WLP0005, which seems suitable for a stout/porter/brown ale. Cant wait.
