Tried a bottle of GSV this evening. Its changed completely. Put a load of it in the loft space for a month. Carbonated nicely. Sweet, dry with bananas and pear drops ever so slightly spicy. Pretty damn smooth as well. Amazing a the first bottle i tried last month was dog rough and went down the drain. Love the fact that the colour comes from the candi sugar. its got a Chimay nose but smoother so i guess the duvel bottling yeast is playing its part.

The Milk bottle starter is currently a 1045-ish Stout Wort, though if it gets going I'll be doing a Light to medium Belgium.
I'm tossing a few ideas around, I quite fancy an low-ish ABV but its tempting to do a 7% a bit like I did before as my 'Yorkshire Trappist Red' was a cracker.
