I'm racking all of mine to demijohns for a couple of months as some of it will be sitting on bourbon-soaked oak cubes. I was thinking of adding fresh yeast for bottling.

I was thinking along the same lines there, bulk age for 10 months then bottle with a bit of good yeast for the last month or so.

Mine will be going striaght in bottles if i can get it down to a resonable FG. Got some wine yeats ready, to help it along if needs be, but so far so good. Then gonna store my empties on top of bottled stout, so its harder for me to get to em, for 'quality conrol purposes'.
