Chocolate

Post by Bigster » Sun Apr 23, 2006 8:29 am

When attending the odd beer festival or 10 there always appears to be ales with a waft of chocolate in and they always taste good.

Does anyone have an AG recipe that uses chocolate ?

Cheers

i have brewed chocolate beers a couple of times. works particulary well with stouts.
what i do is during the boil (15mins at the end) add a couple of tables spoons of coco powder. experimentation is the only way to see what is right for you.
this my last one was 2 tablespoons in a 1045 stout recipe (i will try to remember the recipe for you). i any stout recipe would be fine although it works best with a sweeter stout.
good luck

I've got the feeling that a clone recipe is in Dave Line's BBLTYB book, will check tonight...

Cheers andy.

As well as a recipe in Dave Line's BBLTYB, there is one in Wheeler and Protz's Brewing Brtish Real Ale at Home ;)

Yup, Youngs Special is in BBLTYB, man I'm good!

Recipe for 25 litres

Mash:
90 mins, 15L at 66degC
Pale malt 3750g
Crystal malt 150gm

Boil:
90 mins
Fuggles 60g 90mins
Goldings 40g 90mins
Demerara sugar 400g disolved in hot water and then added to boil
Goldings 15g at power off
1tsp Irish Moss last 15 mins

Ferment out to 1012 then dry hop with 10g Goldings in cask

OG 1047

All above are Dave Line quantities and his famous optimistic efficiency so perhaps up grain bill by 10-15% ?

And, in the bargain basement....

Nice one andy - indeed you have a good memory for a beer drinker ;)

Have put bid in - Does anyone know if this book is still in print / available in HB shops? If answer is no I will raise my max bid.
