my brothers partner has a gluten allergy, and i was thinking of brewing her a beer for when they come up for christmas.

i was thinking of brewing a 2 gallon batch of 100% buckwheat beer to try it out, and using dried yeast, as from what i can tell, the smack pack Wyeast strains have a barley solution to help it grow once smacked. however i think any of the whitelabs strains would be fine since its a pure yeast culture.
obviously the yeast strain is going to be important since a lot of the flavour will come from this, based on the fact the buckwheat has a very nutty flavour(i think

), i want to spice it up a little with something, but limited to the ingredients available that will add anything, cos rice and corn would just add fermentable sugars, not much flavour.
maybe a really fruity ale yeast would be good, or even a hefe yeast? any sugestions guys?
the fun comes in trying to malt my own buckwheat! theres loads of tutorials online though. seems easy enough though.
