Dark Star Brewery Over The Moon Mild

Post by fivetide » Mon Apr 07, 2008 7:14 pm

By far my favourite mild is Dark Star's awesome Over The Moon.

If you haven't tried it, it's a full-strength mild with a fruity character and a really surprising long hoppy finish. I bloody love it me.

If you have tried it, any idea what it's made with and how? The hops are certainly citrus but it's not obvious what variety is used to me. There's dark fruity malt in there, but I don't know what kind or how much.

Any insider info anyone?

I looked yesterday but could only find Mild for May listed as a mild for them.
I do know that they use Cascade in the Hophead bitter so perhaps it is similar? Otherwise First Gold might be the culprit for a good citrus flavour in an english beer.
Can't help more than that I'm afraid.

I did a quick search on google and all suggested that it was very much a dark mild, but with a strong hoppiness so I'd suggest any good dark mild recipe. Crystal, pale chocolate malt and some roast malt with a higher level of bitterness and some generous late additions, and possibly dry hopped, with Cascade, or perhaps a combo of First Gold and cascade.

I believe that Dark Star were forthcoming with info about Hophead from a previous thread so perhaps an email asking for details, or at least just for the hops used, would be worth a try...

Sounds interesting, milds are few and far between up here except at beer festivals. I had a few pints of Black Cat mild recently in the Bon Accord in Glasgow, not bad but pretty unremarkable. I remember having a few pints of Highgate mild last year, now that I liked.

I think it will be time for me to do a mild again :D .

I suspect their yeast is also bringing a lot, it would be interesting to find out what they are using

Their American Pale Ale (APA) is out March-May but I haven't tried it yet. The EPA English version was great though, the Spring Solstice was fab and of course Hophead is always pretty special. But Over The Moon is the hardest for me to work out - yummy though.

The American Pale ale is the best beer of theirs I've tried (I live close to the brewery tap 8) although rarely get the chance to go :(

Not tried the mild, but as others have said, I'm guessing they bung a crazy amount of late hops in.
