Hefe Weissbier Extract recipe

Post by macleanb » Sat Apr 19, 2008 11:43 am

Hi Guys

Can anyone recomend an extract hefe weissbier recipe. I love a nice Weihenstephan after work, so something in a similar vein would be great.

I have can of JB Wheat, 3068 yeast, saaz, halertau hops, quite a few speciality malts - but no recipe. I also have extra pale, pale & medium DME etc...

As I often find there SOOO much info on this site, I cant choose from my search results.

Cheers & ttfn benm

At its simplest you could just used the wheat malt extract and hallertau hops for around 15-20 IBU's

I use some Munich malt but that needs to be mashed, you could add some Melanoidin malt (150-200g)

Thanks. As I only have the one can I am going to be making quite a small batch, I was thinking of adjusting "by eye" (hydrometer) to about 1048, which I am thinking must be around just 12 litres (pure guess, dont know the maths). Is the amount of specialiaty malt you gave suitable for this small size, as I suspect this is the sort of amount for 23l - and in this size batch would make it rather dark? (I dont know what "L" Melanoidin is, and as the only other time I used it was with a fair amount of chocolate, I really dont have even a feel for its darkness)
