Reprobate Stout

Here is another recipe in Brewing Classic Styles by Jamil Zainasheff. Its another big beer for me after McDoles Brown Ale but looks good. It is meant to be a roastier,hoppier version of Foreign Extra Stout. I can either use cascade or amarillo instead of centennial but am not sure which to use. I have not used amarillo yet and heard its a bit orangey. Do you think i should go for cascade or amarillo for aroma?

I've found using Amarillo in my current batch tastes fine, I wouldn't say it's orangey though. TBH, I put 100g in mine - 50g boil, 50g steep and expected one of my usual very hoppy beers but it's far from it. Mine has an 8%AA and is no where near as hoppy as some of the other, lower AA hops i've used. These were pellets so i'm not sure if this should effect the outcome, I doubt it.

If your after something a little more on the citrusy side you could do worse than use Aurora, these are a super styrian type and are very strong :lol:
