Christmas Warmer Recipe

Been a few months since my last AG due to a new job (have managed to fit in a couple of kits though!). Have got my last chance this weekend to get all the kit out and do an AG before our baby CrownCap arrives at the end of September.

Was thinking about doing a nice big(ish) Christmas warmer, basing it loosely on Wadworths 1824 Particular from Marc Ollossons real ales book. Anyone tried it?

Current thoughts (very rough and based on what I have in stores)...

Malt/sugar for ~1065 OG, mash at 66C
90% Maris Otter Pale
10% Crystal
Tin of golden syrup in boil

Bittering hops for ~35IBU
Target (mostly, say 80%)
Brambling X (a few grams of left overs)
Challenger (a few more grams of left overs)

Late Hops
Styrian Goldings in last 15 mins

Yeast
Probably 2pkts S-04.

Hopefully should be ready to crack open at Christmas and put a glow in the cheeks :D What do you think?...

Primary : Nothing
Secondary / Conditioning : Nothing
Drinking : Mosaic IPA

Sounds good. The only thing I do differently is boost the hops up to about 50 IBU's. I think I'll probably brew something similar. Be nice to celebrate the birthday of the baby Jesus with a nice, strong English ale.

One thing I'm hoping to get is a bit of rich fruitiness in there. Marc's recipe tasting notes seems to suggest it has this.

I have chosen S-04 to that end too (plus it'll be going in bottles).

Any other suggestions for getting fruity? :wink:

Well, all set for tomorrow and now have the recipe sorted. Its the biggest brew I've done to date and will stretch my mash tun to its limits (batch sparging).

I'm hoping to get a good balance between the malt, hops and alcohol in here, with perhaps a slight emphasis on the maltiness.

Bit of a hop cocktail as I am clearing out a few of the left overs in the freezer, but I hope they all bring something valid to the mix.

23L
OG 1075
FG 1020 (at least, I hope)
IBU ~44

6.225kg Pale Malt (Warminster Maltings Maris Otter)
0.700kg Crystal Malt
0.075kg Chocolate Malt

Mash 90mins @ 66C

24g Target (10.2%) 120mins
24g Brambling Cross (5.1%) 120mins
16g Challenger (7.1%) 120mins

0.5kg Golden Syrup 60mins

5g Challenger (7.1%) 15mins
10g Bobek (Styrian Golding) (4.0%) 15mins

Ferment with 2x 11g Safale S-04

Bottle condition for at least 3 months
Next Up : Something for the summer
Primary : Nothing
Secondary / Conditioning : Nothing
Drinking : Mosaic IPA
