You might remember I posted once before to see if anyone knew how Darkstar Brewery had managed to make Over The Moon - a 3.8% mild with all the hop taste of a modern IPA.
I'm now after any mild recipes you might have with a good hop character. The only problem I have is that I don't own any Challenger, but I have plenty of Goldings, WGV, Pioneer, Fuggles, Bobek and a few other bits and pieces.
Any ideas very welcome - I'd like to make a mild that bitter drinkers will enjoy packed with aroma. Cheers!

Dark stars London brown and mild both use EKG, as per their PDF

Thanks - yes, Darkstar's Mild for May was pretty good, and a big chunk of EKG at flame out sounds like the most straightforward plan, but it seems likely they'd use Challenger for copper hops and I'm not sure what I could use instead - Fuggles (I only have homegrown) or Northdown perhaps?
Having never made a mild before, I was thinking of about 75% MO, 10% Crystal, 10% torrified wheat, and 5% roasted barley, or similar.

Here's my mild recipe, which I dry hop with EKG.
82.5% Two-row pale
3.2% chocolate malt
3.2% pale chocolate malt
6.3% dark crystal malt
3.2% special roast(I believe similar to amber malt)
1.6% roasted barley

Hop as you like with EKG. Dry hop in barrel or corny.
Flavors are easily identified and nicely layered. There's
a light, flinty, chocolate flavour that is wonderful.
