Tribs' Amarillo IPA

Post by mysterio » Fri Sep 15, 2006 10:20 am

I'm brewing this one today. Although I can't remember the hopping schedule, only the grain bill. Anyone got a copy of it? Can't seem to find it in the archives.

I can't find a few of the recipes I posted. Here it is. I hope its not too late.

I previously mentioned moving 5g from the FWH to the 60 min addition but I've changed my mind. Theres plenty enough bitterness. I had a pint last night. Its crystal clear now probably due to the dip tube mod (gonna do this on the other cornies) and the aroma is even stronger  Its incredible.

What's your dip tube mod? Are you dry hopping in the keg?

I cut a little off the bottom of the dip tube and attached enough beer line to it so it curls upwards sucking from above rather than the sediment off the bottom.

Yeah I dry hopped in the keg :D Chucked the pellets in a muslin bag that had been boiled for ten minutes (I don't bother weighting them anymore). Oh and I shook the keg to distribute the hop oils after purging the O2

Only 20 grams of Amarillo left so I'll probably experiment with dry hopping in the keg.

I'm not really a huge fan of dry hopping because I always get that grassy flavour

I have personally never had grassiness from dryhopping. Not that I don't think it happens, I just have never had that prob. But I do tend to use hop blends when dryhopping. And I use high alpha, low cohumolone hops. Is that the reason? I don't know, but it seems to work for me. anyway, maybe we need more info, I'm not sure anyone has really studied why htis happens, but research is in order, meaning more brewing is needed!! Yup, more brewing and drinking, er, um, I mean studying! yeah, thats it, studying!!

I usually get a little grassiness from hops but I didn't get any from the Amarillo pellets from H&G. I wonder if its something to do with the quality of the hops. I notice the M&H hops tend to have a lot of stalks and seeds? in occasionally and often the aroma is disappointing.

BTW I primaried for 2 weeks then straight to the keg on my batch.

PS. If you followed my hop schedule you should have 25g left for the dry hop :?

I only got 77 grams in my tub, plus I added a few sneaky extra pellets to the bittering addition.

I think i'm going to primary this one 'til it's done then rack it off the trub and let it secondary for a couple of weeks - there was quite alot of gunk in this batch that made it into the primary because of the pellets.

77g :?: I didn't measure mine TBH.

Yeah I found a lot of gunk also, but it was really well separated (I think due to the whirfloc :D ). I didn't even bother using the hop strainer.

I found it had dropped really clear after 2 weeks. Its bright as a button now. I only brewed it 17/08.

I used whirlfloc and a cheeky pinch of irish moss and it seemed to work wonders in seperating all the crap.

Speaking of whirlfloc, I use it but have never seen this bit of info. I thought this would be a good place to share it.
Quote:
I did actually hunt down the specialist at the manufacturer of Whirlfloc. The company that makes Whirlfloc tablets is Quest International in Ireland and the contact was Liam Holog? Anyway I learned several interesting things from this very friendly, knowledgeable and interesting man (he even wanted to idle talk for quite some time):

1. Whirlfoc is refined kappa carrageenan with some talcs to help in tabulation.

2. pre-hydrating whirlfloc does nothing at all to increase effectiveness. In fact it's not even water soluable at lower temperatures so all you'd be doing is getting it wet.

3. most interesting: do NOT add whirlfloc any earlier than 10 minutes before end of boil. It acts immediately and at most only really needs 5 minutes in the boil. If you add it earlier you will denature the carrageenan (not quite sure what that means - anyone?).

4. The manufacturer recently has done some google searching and was surprised that it has become so popular amongst homebrewers. Their target is large breweries and they only sell it through large distribution chains so wasn't aware it was going out to LHBS suppliers in the current volume.

5. if you are adding any more than one tablet for 5 gallon batch, don't bother. One tablet is 2.5 times the dosage they recommend. For record: one tablet is 2.5 grams. They recommend 5 grams per hectoliter (2 tablets to about 25 gallons)

Most of the reports I see say whirlfloc is a bit more effective than dried irish moss, possibly because of the way it's distributed in the kettle. Certainly whenever I've used it it's resulted in a clearer beer but I'm not experienced enough to attribute that purely to the whirlfloc.
