Ok, im off to collect 25kg of marris otter and some other bits and bats tommorow from a local microbrewery (a really good place too buy grain cheap if you can get one onside) and am planning the following brew for this coming or next weekend

Duncnsdark

Mash for 90 minutes
5.5kg Pale Malt
0.25kg Crystal Malt
0.15kg Choclate Malt

15g Fuggles @ begining of 60 min boil
28g Goldings @ begining of 60 min boil

15g Fuggles @ 40 min into the boil
28g Goldings @ 40 min into the boil

15g Fuggles @ 0 min, steep for 15 minutes after flame off
15g Goldings @ 0 min, steep for 15 minutes after flame off

S04 yeast

Any advice anyone can offer obviously would be appreciated as this will be only my 2nd all grain brew and as pleased as i was with the first i want this too be even better. also im planning on burtonising the water with some gypsum, would one teaspoon to 5 gallon be a sensible ratio? and do i do this pre boil or post?

Hi there.

I like your recipe, and remembered a very similar one that I'd seen from Marc Ollosson. As it's tried and tested, you might like to compare?

Blackness

Pale Malt 5645g
Crystal 410g
Black malt 205g

2hr Mash (66deg, 16L) - 2hr boil - 1.055/1.012 - 5.5% - 23 litres

Fuggles (3.3%) 45g (start of boil)
Goldings (4%) 88g (start of boil)
Goldings 22g last 15 minutes
Irish moss (or whatever you use for this)
Goldings 10g (dryhop)

The amount of gypsum should depend on the water your using. I add 2 teaspoons pre mash, you want it to alter the PH

Thanks for the advice chaps, as an ammendmant to the recipe im also gonna mash in 0.65kg of torrified wheat for better head retention.
Incidentally im adding the hops in large muslin bags as opposed to straight into the brew because of this im thinking of upping the amounts used. any opinions on this?

No opinion on the hops as I've never tried bagging them, but you might want to cut down on the torrefied wheat. I normally use around 100-150g for head retention on a 23l brew and it seems to work well.

Thanks, 1st time using torrified wheat so i was figuring 10% of the grain bill as i really didnt have much of a clue :oops:

I'm no expert, but i think it's one of those things you don't need a lot of. Wheat also has the potential to add lots of haze to a beer, so it's probably best to keep it low unless you are making a wit or weisse!

Roasted or Flaked Barley (sparingly again) can also add head.

As a total update on the recipe prior to kicking it off on saturday, im gonna go as follows

Duncnsdark

2tsp of gypsum in water pre-boil
Boil 7 gallons of water

Mash for 90 minutes with 16ltrs water at 66degrees
5.5kg Pale Malt
0.25kg Crystal Malt
0.15kg Chocolate Malt
0.15kg Torrified wheat for head retention

30g Fuggles @ beginning of 60 min boil
60g Goldings @ beginning of 60 min boil

15g Fuggles @ 40 min into the boil
30g Goldings @ 40 min into the boil
1 Teaspoon Irish moss

15g Fuggles @ 0 min, steep for 15 minutes after flame off
15g Goldings @ 0 min, steep for 15 minutes after flame off

S04 yeast

Im aiming for a 5 gallon brew, so fingers crossed should be plenty wort left over for an experimental 1 gallon brew using an addition of muscavado and more fuggles dry hopped in the hope that i get an old perculiar type brew from it
oh this will also be my first attempt at working out efficiency and ive worked out as follows

5.5kg Pale Malt (5.5x300/23=72)
0.25kg Crystal Malt (0.25x240/23=2.5)
0.15kg Chocolate Malt (0.25x240/23=2.5)
=77gravity points so 10.77 should be the SG assuming 100% efficiency? is that correct
