Its been a long time since my last brew ( 6 weeks ) and stocks are precariously low. Going for a dave line recipe again (with my efficency adjustments). Ruddles is a bigster smurf family favourite. :D Hopefully brewing this one night later this week.

Ruddles County Bitter OG 1050 25 Litres

Crushed Pale malt 3875g (4260g)
Crushed Crystal malt 250g (275g)
Brewing sugar 500g
Molasses 30g
Brewers caramel 10ml
Irish Moss

Mash for 90 mins at 66c

90 mins Boil
Fuggles 60g full boil
WGV 45g full boil
WGV 15g 15 min soak after heat off


One question - I can see / taste the benefits of specific sugars such as demerara and molasses. However its questionable what this brewing sugar brings to the brew other than extra alcohol. Anyone hazard a guess at the amount of pale malt to replace this 500g ?

Hi,

the point of using brewing sugar is to make a drier beer. If you replace it with pale malt you could end up with an unbalanced beer with too much residual sweetness for the bitterness.

It' the beer talking. I've got 10 kegs and all have beer in. I have 10 gallons in the fermenters so I'm trying to clear a couple of kegs. My wife is currently humouring me :)

Yep. I thought at first we could bastardise "DC Rye IPA" with a few English hops, but the shop had no rye. So I reckon we should do the house bitter, "Phil's Special Bitter" instead. I'm drinking it tonight and I reckon it's pretty good. Don't worry, Andy, I have a whole keg once I finish this one :lol:
