I am looking to brew an Old Timer type of beer for Christmas. Anyone have any recipes?

Hi Pete,

There's a few old winter beers in Wheelers book, let me know if you want any others, here's the one you named:-


Wadworth's Old Timer

OG 1055

Pale Malt 5350g
Crystal Malt 180g

Invert cane sugar 480g
Fuggles 75g (start of boil)
Irish moss/whirlfloc 1tsp / 1 tab (last 15mins)
Goldings 5g (dry hops in the cask)

Mash liquor 14 litres
Mash temp 65'C
Mash time 2 hours
Boil time 2 hours
Alcohol 6%
FG 1011
Bitterness 28 EBU
Final Volume 23 litres

Flaked Wheat 280g

Invert cane sugar 1,200g
Goldings 95g (start of boil)
Goldings 20g (last 15)

Mash Liquor 12 litres
Mash Temp 67'C
Mash Time 2 hours
Boil Time 2 hours
Alcohol 6.7%
FG 1008
Bitterness 40 EBU
Final Vol 23 litres

what would you use for invert cane sugar? is that golden syrup again?

there is also a whole pages on notes on how to brew this ale, cause of it being a bit of a monster, I will copy it if anyone needs it

i am pretty sure i remember you can make inverted cane sugar by boiling 'normal' granulated with some citric acid for 10mins
i may be corrected though

Tate and Lyles GOLDEN SYRUP is invert sugar.

I found most recipies hard to get hold of until I found the library. They got me a copy of the CAMRA brew british ales in 2 days. Its currently out of print so finding your own can be difficult. It has winter warmers, stouts, pale ales and Timmy Taylors.
