Something with Amarillo in it

Post by jubby » Sun Jan 04, 2009 5:38 pm

I have decided on a recipe for my next brew and would welcome any comments or ideas. I want to achieve a powerful hop taste and aroma, fairly bitter with a slight malt aftertaste.

25 litres at 1051 OG 36 EBU

Mash (65C for 60 min) 5kg Maris Otter pale malt, 450g wheat malt, 200g special B.

Boil (90 min) All Amarillo @ 9.1%. 25g whole boil, 35g at 15 min, 40g at 1 min.

Water treatment filtered water, 1/2 camden and CRS in mash and boil, couple of teaspoons of gypsum in the boil.

Yeast I have S-04, nottingham and Wyeast 1318. Will probably go with S-04 at 18C

I have taken haz66's advice to use a theme to name my beers. I have also pinched Steve D's idea to use clergy bodyparts. So, this will be named 'Reverend's Ringpiece'

That sounds lovely. Enjoy making it.

My tuppence worth would be to lower the amount of wheat malt a bit, and maybe to do the hops 20g first wort, then 40g 15 min and 40g at 1 min.

Yes, I had considered that hop schedule, (as you have guessed, i want to use the 100g pack) but still not sure which to use or how much difference it would make.

If you chuck the gypsum in the mash (or half of it) the mash will benefit from the calcium.
I had read that in one of your previous posts Chris. I use it in the boil to help the hop aroma/taste. What will adding it to the mash do? Will it change the ph?

(Won't be able to reply for a while. Off to work unfortunately)

Brewed today, but changed my mind with the ingredients:

Mash: dropped the Special B and upped the MO by 200g.

Boil: 50g Boadicea 7.6% at 20 min, 50g Amarillo 9.1% at 10 min, 50g Amarillo at 1 min.

Went with the Nottingham yeast.

A few problems with the hose constantly freezing up, but went ok in the end with 24 litres at 1.050

A bit of an experiment with an expensive hop schedule, so I hope it tastes good!
