Hi all, 2 questions,

the recipe requires Halcyon pale malt, I only have MO,,, much difference?

the recipe says white sugar, is that in the mash or the boil?, i take it i can use tate and lyle or can i use light spray malt?

Oh i suppose that was 3 questions really, Hopefully brew this tomorrow, BBC website says a sunny day :D

If that's what you have got, go for it! I havn't used Halcyon myself, so I can't comment on any possible differences.
The recipe says white sugar, is that in the mash or the boil?,


In the boil, add it about the half way point. Don't mash sugar/spraymalt, etc.
I take it i can use tate and lyle or can i use light spray malt?
You could use Tate & Lyle rather than silver spoon. Tate & Lyle is cane sugar, Silver Spoon is beet sugar. Also, you could use glucose brewing sugar. I wouldn't use spraymalt in a ag brew myself, far better ( and cheaper!) to use malt instead.

Mr Lines original recipe used invert sugar (golden syrup) 520g for a 25 litre brewlength. I brewed this with Maris Otter and it was very close to the original County, it's on my list to brew again.

I used GWs recipe with MO and it was pretty much spot on for taste and colour
allthough it came out alot stronger

Invert sugar is easier for yeast to munch on. You can invert sugars by adding certain types of acid, but there's no need because golden syrup is invert sugar. Just add it in place of the sugars in your recipe.

Dave Lines recipe, 25l (from Brewing Beers Like Those You Buy) is as follows:

Mash. 4kg pale malt, 260g crystal.

Boil. 60g fuggles and 45g WGV for whole boil with 15g WGV at boiler off. 520g golden syrup mixed with 30g molasses and 10ml brewers caramel (colouring) for the last 30 min of boil.

The hops need to be reduced by about 20-30% and the recipe assumes a fairly high efficiency (around 85% mash efficiency) so you may want to increase the malt weights by 10-15%. At the end of the day, I brewed mine too strong and too bitter, but it was blummin good.

Thanks for clearing that up,, the recipe ive got from GW differs somewhat,, Pale malt, Crystal, a wee bit black malt, white sugar,,Challenger and Northdown for the 90min boil, and Goldings last 15, mmm i could try them both :D ,,

i miss the oakham brewrey,

i had a memorable visit one afternoon when i lived down there,, SWMBO didnt like it,,, i fell asleep in my pizza, woke up at about midnight on the kitchen table :oops:

Grahams recipe is much closer to the current Ruddles County. Breweries change their ingredients, ABV and colour over the years. Mr lines recipe was probably very close to the original in it's day.

The white sugar is used in place of the golden syrup. Ruddles use a "special brewing syrup" whatever that is. The black malt is there to add colour in place of the Brewers caramel. Not sure about the difference in hops, they are probably similar, especially the late hops. I used WGV which as you probably know are Whitbreads Golding Variety, Graham used goldings.

Either recipe will end up a nice drop of ale.

It was fairly clean when i got it. After a brewday I boil about a gallon of water with a scoop of oxiclean with the lid on for a few minutes then lightly scrub with one of those nylon pretend scotchbright things. Don't use anything abrasive as the inner jacket of the boiler is plated copper. The inside has now discoloured with use. a nice yellow brown colour, except the bottom, where the oxiclean is boiled which is still bright plating.

These boilers are a great tool, but getting on a bit. If it's not been done already, I would recommend replacing the cable (good quality heatproof stuff) as the insulation around the connections on mine was brittle and falling off.

After a few samples of the gravity taken during the sparge, i didnt add any sugar,, the FG was 1050 ish ,, so heres hoping :D 25Ltrs of the finest :=P

Ruined ruddles maybe,, moved the budget barrel from the warm tonight, had a wee taste, only to find it was flat :cry: ,, seal on the cap was not sitting right, new seal and washers for s30 fitted, blasted with co2,, waiting game now,, any ideas???

It will be fine as long as you steralized everything. The beer is protected with a layer of C02 which is heavier than air.

I would release the pressure and re-charge with C02 (if you havn't already)to purge any O2 that may have got in.

Tried another sneaky tipple after a blast of c02,and repairing the seals on the cap,, its bloody lovely :lol: ,, now have i got the patience to let it mature :^o
