Goose Island IPA

Post by Eadweard » Tue Jan 27, 2009 11:42 am

I'm very fond of this beer and I've love to have a go at making it. I've tracked down some information online but I'd welcome anyones help.

On the Goose Island website there's the ABV (5.9%) and the IBU (59), so far so good...

I found at this link http://beer-pages.com/protz/features/goose-island.htm that "The beer is generously hopped with American Cascade and Mount Hood varieties, along with Czech Saaz and Styrian Goldings"

This seems a bit of an odd combination. What I really get from the beer is a grapefruit taste.

And at this link http://thepint.blogspot.com/2007/04/bee ... e-for.html I get that "Goose Island India Pale Ale contains four pounds of hops per barrel". With American barrels being 117 litres that give me 1816 grams per barrel or 15.5 grams per litre which would mean 388 grams in a 25 litre batch  Seems a little high to me, even for an American IPA! I was thinking to mainly go with Cascade, with a lot added late but any suggestions are welcome.

That's interesting. Their website used to say Centennial, Fuggles and Cascades but things might have changed. I haven't had one of these for awhile as it's often not all that fresh at my local market.

Our gold-medal India Pale Ale is brewed with only one malt, but liberally hopped with Centennial, Fuggles and Cascades for a huge, fresh hop flavor and long hoppy finish.

The four pounds per barrel sounds very suspicious to me, unless they're using super low alpha hops.

I really taste the Cascade in this so I think you'll be good with a lot late

I had a bottle of this earlier today.

I thought I tasted Cascade and maybe Amarillo - it was very similar hopwise to my Winter Sun IPA (although my wife thought mine was better!!!!!)

Thanks for the help. Centennial, Fuggles and Cascade looks a much better combination than the one I found, though I might use Styrian Goldings instead of Fuggles.

GI India Pale Ale OG: 15.5, FG:4.9 , IBU: 58, SRM: 10, Hops: Styrian, Cascade, Fuggle, Centennial , Malt: Special Pale ( not sure what that is but would assume Marris Otter or other good pale malt would be fine)

It just keeps getting better, thanks guys.

I think I may make my own 'special' pale malt by adding a bit of cara. I know it won't be a single malt then but I think it will match the flavour more closely than using all MO.

Looks like it is Styrians, Cascade, Centennial and Fuggles - there's an article about it here: http://www.insidebeer.com/articles/20091222_1
