G'day all , I am new so I'll ask , (could't find in the first few pages )Newcastle Brown recipe for all-grain any one got a tryed and true recipe : =P~

A couple of decades ago (!) I brewed Dave Line's recipe. It came out well although a bit drier than the real stuff. Went down a treat. Dave's use of sugar and hop extract does make the recipe look a bit dated but here it is:

3.5kg Pale
0.25kg Crystal
0.1kg Chocolate
0.5kg soft dark brown sugar
60g fuggles

50g equivalent Northern Brewer hop extract

OG 1048

Brew as normal but add the hop extract in the FV.
Conventional wisdom states that DL assumed insane efficiency so you may want to boost the malts a bit, depending on your own efficiency.

Here's the recipe from the clone brews book:

18.9 litre brew length
4Kg Pale Malt
57g Crystal malt
57g Chocolate malt
28g Black Malt

23g Target 60 min Boil
14g East kent Goldinsa 15 Min boil

Bitterness: 26 IBU OG estimate: 1.048-1.051

Ive not tried it yet so cant report how close it is. It's on my to-do list though.

Hi, I got this recipe off another site a while ago, I tried it a couple of times and it seems to me to be just like Newcastle Brown Ale, tastes very nice :D :beer:



All Grain Recipe - Newcastle Brown Ale ::: 1.050/1.014 (5.5 Gal)
Grain Bill (75% Efficiency assumed)
9 lbs. - Maris Otter - 2 Row malt
2 oz. - Chocolate malt
2 oz. - Crystal malt
1.5 oz. - Black Patent malt


Hop Schedule (25 IBU)
1/2 oz. - Target - 60 min.
1/2 oz. - East Kent Goldings - 15 min.

Yeast
White Labs British Ale Yeast (WLP005) - 1800 ml starter

Mash/Sparge/Boil
Mash at 154° for 60 min.
Sparge as usual
Boil for 60 minutes
Cool and ferment at 68° to 71°

I would ferment it using Wyeast 1028 london ale.

So as a local I don’t ever drink this piss because it tastes of chemicals. I have never seen it on tap in Newcastle and know no one who drinks it. It is rarely seen in bottles, always on special offer round these parts and even then seems like an anti-tourism venture.

If you compare this beer to other corporation beers it is not bad. Brown ale style is unique therefore it is worth to brew it at home. I would go for 3.5kg pale, 100g crystal, 50g chocolate, can of golden syrop. 20 ibu in good quality bittering hops. And Wyeast 1028 london ale. But this beer has to be matured at least 3 months.
