A beer for Christmas

Hi,

after years of eating and drinking too much, it has finally caught up with me. From new year I went on a diet and swore off Beer until the end of the year.

However I have loads of grain & hops of all kinds so I was thinking of brewing a top all grain beer for when I'm off the diet.

It has to use up loads of pale malt & hops and really benefit from 8 to 10 months of maturing.

Any suggestions?
