tried this today. thoughts?
(other than "i don't like ginger!" )
today i made a "from scratch"
Ginger beer, which i did try and make "spicy"....heres what i did, see what ya think
boiled 2kg sugar,
5L water, and...
2 Cinnamon sticks,
8 cloves
1 tsp red chilli flakes
1kg fresh ginger root (all blitzed in a processer)
simmered for an hour,
left it to cool
sieved it through a bag
put in fermenting bin, topped up to 20L with cold water,
sprinkled on a Champagne yeast,
let stand for 15 mins,
stirred it, and is now gonna sit fermentin, and will hopefully bottle in 4-6 days.
will let you know how it goes.

......but....question please.....how long should this be in the fermenting bin? til same resadings 2 days on trot on a hydrometer?
how long in the bottle before drinkage? any ideas?

doesn't seem to be frothing much in the bin. too cold? or would i expect little of that in this? anyone any experience of similar brews at all, pls advise

hello mate, what temp is it fermenting at at the moment? i think your best be is to find some where in your house thats around 18 to 20 ' C, not sure about the foaming but keep and eye on the hydro reading and if its fermenting ok then thats all that matters really, what was the OG ?

my prob is i live in an old cottage, and its really hard to get a warm spot. i've had it by a radiator, but the heating cannot be on all the time. thinking about a brewbwelt, but money is tight at the mo.
i did a Norfolk Nog, and that seemed to go ok. would this stuff go "rocky"? should i stir before the heating comes on, theses sediment at the bottom.
hmm....guess i'll have to be a summer brewer!

id leave it alone and keep checking the gravity with the hydrometer,did you wright down the original gravity?

its still sending up tiny bubbles..i'll keep checking gravity.

Hi Popey.
I made one of these too. Just keep checking the gravity and bottle when you have consecutive readings after 24 hours. Dont over prime it though and i'd recommend plastic fizzy pop bottles instead of glass as the one i made was VERY fizzy. Champagne yeast was what i used too. Makes a very strong brew.

ive been after one for a long long time now, never seen to have the cast sitting around for it...mind you..only time wil tell,

i think youll find this certainly has a bit of taste.....
when ive done a ginger beer in the past ive tried ground ginger(do not go that route....
)
now i usually use 10cm or peeled ginger finely chopped and added to my wort in the last 15 mins of the boil.
for yourself id boil it in a little water and add to your fermentables before tipping your yeast
a little ginger goes a long way........

from what you're saying. it may be a bit strong? its still bubbling, some 9 days later......hydrometer says 1028..............wish it'd hurry up. still new to this and cant warap my head around when to bottle going by the hydrometer

advice pls....hydrometer reading is now 1018. just a slight change from yesterday, and theres hardly any bubbling at all. Ready to bottle? is there any way i can now work out how strong it is?

Without the OG your not going to be able to calculate the strength.
Basically its worked out by (OG minus FG) divided by 7.5 (I think)
